Ely's Roasted Red Pepper Soup

Roasted Red Pepper Soup 

Ingredients for 4 people:
  • 3 red and 1 yellow pepper
  • 1 onion
  • 1 garlic clove
  • 3 cups vegetable stock
  • Tablespoon plain flour
  • Salt and pepper
Roast pepper.  Steam off skin.  Fry onions.  Add enough flour to get rid of the oil.  Add stock and boil for 5 minutes.  Add chopped peppers and zap.
